Ingredients

For the Muffin:

  • 100g flour of choice (we used brown rice flour)
  • 3tbsp cacao powder
  • 6tbsp unflavored soya protein powder
  • 1tsp baking powder
  • 170ml milk of choice (we used almond) – 2eggs
  • 4tbsp honey.

For the Nutella:

  • 80g dry hazelnut **soak hazelnut overnight in water or im boiling water for 2hours**
  • 1tbsp cacao powder
  • 2tbsp melted coconut oil
  • 2tbsp honey

Instructions

For the Muffin:

  • For the muffin mix mix together flour, cacao, protein, and baking powder.
  • Beat together the honey, eggs and milk.
  • Slowly add wet ingredients to dry ingredients until well combined
  • Pour 1/12th of the mix into the bottom of each muffin case
  • Put a Nutella ball into each case
  • Top each case with the remaining muffin mix
  • Bake at 180’c for 20mins and devour!

For the Nutella:

  • For the nutella blend hazelnuts for about 5mins or until butter starts to form
  • Add all other nutella ingredients and blend until smooth.
  • Roll into 1cm balls.
  • Keep excess for snacking essentials 💁
