INGREDIENTS: (Serves 12)
25g Desiccated Coconut (plus 1tbsp for coating)
30g Almond Meal (plus 1tbsp for coating)
40g Cacao Powder (I used Choc Chick)
¼ tsp Vanilla Essence
1tbsp Hazelnut Milk (I used Rude Health)
Pre heat the oven to 200˚c.
Place hazelnuts on a baking tray lined with baking parchment. Roast in the oven for 10mins, be careful not to burn them.
Remove from the oven and allow to cool a little, rub each one between your hand to remove the dark brown outer layer. Discard the outer layer crumbs.
Blend the hazelnuts until smooth then spoon out into a big bowl and add all other ingredients and mix well until all combined. And more or less milk until desired texture is reached.
Roll mix into 12 balls. Scatter a tablespoon of both desiccated coconut and almond meal on to a plate. Coat each ball in the mix and then leave to set in the fridge for 1hour.
