  • 1/3 Broccoli Head
  • 100g Frozen Spinach
  • 2 Small Courgettes (200g)
  • 6 Eggs White
  • Sea Salt
  • Black Pepper
  • 1 Avocado
  • ½ Chilli


  • Pre-heat grill
  • Boil/steam the broccoli and spinach.
  • Slice the courgettes up the middle and then finely slice. Pan fry until slightly golden.
  • Whisk together all the egg whites with a little salt and pepper and pour over the courgettes in the pan.
  • Arrange the broccoli around the courgette and place the spinach over the top.
  • Place under the grill for 5mins or until the top is cooked.
  • Slice the omelette in half and serve each on a plate. Finally add half an avocado and a little sliced chilli to each.
