• 1 Chicken Breast
  • 1tbsp Desiccated Coconut
  • ¼ tsp Ground Cumin
  • ¼ tsp Ground Coriander
  • ½ Lime (zest and juice)
  • 1tsp Rapeseed Oil
  • 35g Couscous (dry weight)
  • ½ Mango (Diced)
  • 5 Leaves Fresh Mint (finely chopped)
  • Pinch Salt
  • Pinch Black Pepper


  • Pre heat oven to 180˚c.
  • In a bowl combine the cumin, coriander, lime (zest and juice), rapeseed oil and half of the coconut. The roll the chicken breast in this mix until coated.
  • Foil line a baking try and place the chicken breast on it and roast for 15-20mins, or until cooked through.
  • Meanwhile, prepare the couscous. Once cooled add in chopped mango and mint
  • To serve place chicken breast on plate with couscous and a wedge of lime served on the side. Season with a little sea salt and black pepper, if you wish.
