Ingredients

  • 1 Turkey Breast
  • ½ tsp Cajun Seasoning
  • 1 Courgette
  • 1 Carrot
  • 1 Celery Stick
  • 1 Spring Onion
  • 1 Chilli
  • 1 Beetroot
  • 1 Lemon
  • 1tsp Rapeseed oil

Instructions

  • Pre heat oven to 180˚c
  • Rub turkey breast with Cajun seasoning and roast in the oven for 20mins, or until cooked through.
  • Grate courgette and carrot.
  • Finely slice celery, spring onion, chilli and beetroot.
  • Toss all the vegetables in lemon juice and rapeseed oil.
    Once the turkey is cooked, slice it up and add to the top of the vegetables.
