• 80g Oat Flour
  • 1/4tsp Baking Powder
  • 1 Pinch Salt
  • 30g Vanilla Reflex Pea Protein
  • 1 Large Egg
  • 30g Coconut Oil
  • 80g Dates
  • 2-3tbsp Boiling Water
  • 1 Pinch Salt
  • 10g Cacao Reflex Pea Protein


  • Preheat the oven to 160°c.
  • Remove the stones from the dates. Place in a bowl, add the boiling water and cover for 10mins to soften.
  • In another bowl mix together the oat flour, baking powder, salt, vanilla protein, egg, and coconut oil. Roll mix into 8 even balls.
  • Grease a tray lined with baking parchment and flatten out each ball. Bake for 5-10mins or until golden. Allow to cool on a wire rack.
  • Meanwhile blend up the dates, water, salt and cacao protein into a paste.
  • Spread chocolate salted caramel mix onto 4 cookies, then top each one with remaining 4 cookies.
